Favourite Summer Recipes!
This month we asked our team what their go-to recipes are for any social gathering and below are the answers!
My favourite recipe to make during summer is Pesto, Cranberry, and pumpkin seed roast vegetable salad. This is an old family recipe that my mum has been making for years and I take it to any dinners with friends!
You’ll need:
1-2 Large Sweet Potatoes
4 medium Potatoes
2 carrots
Vegan pesto
1-2 cups of pumpkin seeds
Dried Cranberries
Goats Feta
Bag of Spinach
Additional –
Bacon
To create:
Roast your vegetables in a pan together with some Italian herbs and a little bit of honey drizzled on the carrots.
If you’re adding bacon, cut into small pieces and fry. Set aside to add at the end.
Once your vegetables are finished, add a bit of oil to a pan on low heat and lightly brown the pumpkin seeds.
Add roast vegetables, spinach and pumpkin seeds to a large bowl, crumble feta over, add a large tablespoon of pesto and throw in the cranberries!
Enjoy in the sun with friends and family and a large glass of wine!
Simon's BBQ Marinated Chicken Thighs with Couscous.
This delicious recipe is perfect for any social gathering - big or small just adjust the amount of chicken thighs you use.
You’ll need:
12 Chicken Thighs
4 cloves of Garlic
2 sprigs Rosemary
100ml White Wine
2 tablespoons Olive oil
5 tablespoons Honey (top tip get the squeezable bottle)
Salt
Pepper
Method:
Add the thinly sliced garlic, rosemary, white wine, olive oil, honey and salt and pepper into a bowl with the chicken thighs and let marinate for 1-2 hours in the fridge.
Grill under a high heat for 15minutes, turning once. Serve with your favourite Couscous.
