Fig & Mustard Croque Monsieur

Ingredients
4 slices of sourdough
20g melted butter
A generous slather of Fig & Mustard Spread
100g grated gruyère
4 slices of smoked ham
¼ cup butter
¼ cup flour
1½ cups milk
Freshly grated nutmeg
salt to taste
Method
BÉCHAMEL SAUCE
Melt butter over medium heat until foamy. Add flour and stir for 3 minutes. Slowly add milk, stirring until mixture is smooth. Cook, stirring, for about 4 minutes until sauce is smooth. Remove from heat and whisk in nutmeg, season with salt.

THE SANDWICH
Preheat oven to 180°. Spread bread slices with Fig & Mustard Spread then béchamel, dividing evenly and extending all the way to the edges. Place 4 slices of bread, béchamel side up, on a parchment-lined baking sheet; top with ham and half of cheese. Top with remaining slices of bread, béchamel side up, then top with remaining cheese. Bake until cheese is brown and bubbling, 10–15 minutes
