Cranberry & Coconut UGP Granola Recipe
Cranberry Coconut Granola

Serves 10
Ingredients
¼ cup extra virgin olive oil
½ cup honey
1 tsp cinnamon
½ tsp vanilla extract
½ tsp salt
1 ½ cup rolled oats
1 cup Upcycled Grain Project Cranberry Coconut crackers, crushed
½ cup dried cranberries
½ cup unsweetened coconut flakes
Instructions
Preheat oven to 160 degrees F.
In a large bowl combine olive oil, honey, cinnamon, vanilla extract, and salt. Mix well to combine. Stir in rolled oats, crushed crackers, cranberries, and coconut flakes. Line a baking tray with parchment or silpat and spread out oat mixture in an even layer.
Bake for 30-35 minutes. Remove and allow to completely cool.
