Plum Glazed Pork

Serves 4-6
Ingredients
1 lb pork tenderloin
1 Rutherford and Meyer Plum Paste
3 Tbsp balsamic vinegar
2 tsp chopped rosemary
1 tsp brown sugar
Instructions
Preheat oven to 400 degrees.
In small saucepan, combine plum paste, balsamic, rosemary, brown sugar and salt. Bring to a boil over medium heat and cook until lightly thickened. (about 5-8 minutes total, but watch so it doesn't burn).
Rub all of pork loin with olive oil and season generously with salt and pepper. Place pork in a roasting pan. Spoon half of the sauce over pork.
Bake, basting occasionally, until temperature reaches 145 degrees F, about 25 minutes.
Remove the pork tenderloin from the oven and allow to rest 10 minutes. Slice into 1-inch slices and top with remaining glaze.
