Quince Sweet Potato Bites with Blue Cheese

Ingredients
2 sweet potatoes, peeled and sliced into ¼ inch rounds
2 Tbsp olive oil
Salt and pepper
1 Rutherford and Meyer Quince Paste, cut into ¼ inch cubes
8oz crumbled blue cheese
Instructions
Preheat oven to 200 degrees C. Line a baking tray with parchment paper.
In a large bowl, toss together the sweet potatoes and olive oil to coat lightly. Arrange the potato slices in a single layer on the prepared baking sheet, using a second lined baking sheet if needed. Season generously with kosher salt and pepper. Bake for 10 minutes, then flip the slices and bake until golden brown, about 15 minutes. If using 2 baking sheets, rotate them between the racks and from front to back halfway through baking.
To assemble, top the sweet potato slices with one cube quince paste and blue cheese crumbles. Return to oven and bake 5 minutes longer, or until blue cheese is melted and bubbly.
